I decided to make some "game day" food for the BCS watching get-together at friend's house. I had not long ago stumbled upon a recipe for vegan jalapeño poppers on Pinterest and it just made perfect sense!
As you can probably tell from my other cooking posts, I am a baker. I do cookies, bread, cake, brownies… cooking regular food, meal food, just isn't my thing. But the only way I'll get better at it is to just do it. Like Nike.
I made sure to use gloves when I cut the jalapeños and therefore ensured no cooking party fouls. I used panko crumbs instead of standard bread crumbs because I couldn't find any at the store (where the hell do they keep bread crumbs?!). And I didn't have that Vegg stuff but holy hell does it sound awesome and I want it.
They were a big hit at the gathering which was made up of seven omnivores and one vegan (me). They all really liked them. Success!
Next time I need to figure out how to get the breadcrumbs to brown and must perfect my assembly line cooking skills. These types of things prove challenging in a tiny kitchen.
